Pasta Pomodoro

Anna ate at Cheesecake Factory for someone's birthday...was it yours, Maddy? She left in love with Pasta Pomodoro and we did our best to make it at home. This is what we came up with. It's the dish she requests most often now.

3 or 4 tablespoons good olive oil. I like EVOO.
2 or 3 cloves of garlic, finely chopped
3 or 4 italian plum tomatoes, chopped

Heat the EVOO and put the garlic in and cook for about a minute. Add the tomatoes and simmer until they release plenty of liquid, but don't cook all the liquid away. That's the best part, according to Anna. Add about a 1/2 tsp. dried basil or even better 1 T. fresh. Salt and pepper to taste. Keep pomodoro sauce warm while you cook about half a box of angel hair pasta. (It only takes about 4 minutes if your water is boiling.) Drain pasta, toss with sauce and grate some parmesan cheese on top. Easy, fast, nutritious and delicious!
