Mashed sweet potatoes with white cheddar

3 lbs. sweet potatoes (6 or 7 medium)
2 tbl. butter
3/4 tsp. kosher or sea salt
3 oz. aged white cheddar cheese, shredded
1/4 cup orange juice
1/4 cup heavy cream
2 tbl. dark brown sugar (or light is fine if you don't have dark)

You can bake the sweet potatoes or peel, chop and boil them until they're tender. When they're done, mash them with the butter and salt, then stir in the remaining ingredients. Put it all in a buttered 1.5-quart casserole and bake at 425 for 30 minutes.

This is a fantastic recipe even for those of us who think sweet potatoes are usually better left alone. The cheddar is a wonderful contrasting flavor. Don't skimp on the cheese--go for the aged white, none of that orange stuff! It is worth it. I got this from the Nov. 2008 Better Homes & Garden magazine.
