Vegetables:
1-1/2 cups cooked blackeyed peas
3/4 cup chopped green bell pepper
1/2 cup chopped celery
1/2 cup chopped red onion
1/4 cup chopped yellow onion
Dressing:
1/4 cup vegetable oil
1/4 cup sugar
2 tbl. cider vinegar
1 clove garlic, minced
1/2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. hot sauce
Combine the vegetables in a large bowl. Combine the dressing ingredients in a small bowl. Pour the dressing over the veggies, toss, and refrigerate for a few hours or overnight so the flavors will meld.

This is from Sylvia's Family Soul Food Cookbook. I don't have the cookbook--got this off the Internet. It's a great way to get Yankee neighbors to eat their New Year's Day blackeyed peas!
Yay! I wanted this recipe! I am going to try the sweet pots too.
