This is my version of The Laughing Seed original. It's very yummy.
Firm or Extra firm tofu
about 1/2 tsp. turmeric
3-4 splashes of soy sauce
salt and pepper
tsp. water
1/2 package of frozen spinach (I am sure fresh would be better...i just rarely have fresh)
about a cup of green peas
about a 1/2 cup of corn
half cup mushrooms
little bit of red onion
1 Tbs. olive oil
1 tsp. earth's balance (or butter)
I used about a half a block of extra firm tofu. Cut it in to bite sized cubes. Place tofu in a container with the turmeric, soy sauce, dash of salt, dash of pepper and about a tsp. of water. Put lid on container and shake it up until the tofu is the color of scrambled eggs. Let marinate for about 30 minutes. (I'm sure longer would be fine too...if you put it in the fridge.)
While tofu marinates, cook spinach according to package instructions. (I only used about half the package..but it's up to you. Oh AND the first time I made this, I cooked the spinach in a little veggie broth. That was good too.)
Saute onion and mushrooms in a skillet with Earth's Balance or butter. When the onions are soft and mushrooms nice and juicy, add in the tofu. Cook for about 5 min. on medium heat. Add in the peas and the corn and cook for another 3 or 4 min. Until peas are bright green and soft in the middle. Stir a lot! Add salt and pepper to taste.
This dish has a mild turmeric, slightly smokey kind of flavor and then the corn gives it a little bit of sweetness. That combo paired with a little onion is really good. Mild flavor reminds me of eggs..but definitely not an egg substitute. I like it better than eggs though.
It's good with lots of other veggies too. Today, I didn't have spinach so I used fresh zucchini and frozen asparagus. It was yummy too! Use what you've got I tell ya. (I really like it best with spinach though.) YUM. I like to eat it with toast or pita chips.
